My path

When I cook, I feel deeply connected to my parents and grandparents, who themselves used to host guests and created a temporary home for them in this way.

After completing my training at hotel school, I initially turned my back on the hotel industry and the family business. The work there often seemed too stressful to me and was carried out with too little care. Five years later, in 2004, I was offered the opportunity to cater for a seminar group. It was a wonderful experience and reconciled me with professional cooking.

Over the next two decades, I was able to cook for various seminars in different locations on the side. I worked on the Croatian Adriatic coast, in the Allgäu, on the Balearic Islands and in the wilderness of the Swiss Alps.

Over the years and with increasing experience, I developed my skills step by step. I discovered the culinary cultures of other parts of the world and experimented with different diets. I followed a vegetarian lifestyle for a long period of time and even lived as a strict vegan for several months.

I had also experienced the positive effects of fasting and diets that completely avoid gluten-containing foods or added sugar.

This period of self-study greatly expanded my culinary horizons and my understanding of nutrition. It also helped me to stop viewing the topic of nutrition so dogmatically. While some things may be universally true, I currently believe that the ‘right’ diet is very individual and is influenced in particular by a person's life situation.

As already mentioned, I have not spent my entire career in the hospitality industry. I also completed a teaching degree and then worked at Montessori-oriented schools in Austria for ten years.

A few years ago, my wife and I decided to embark on a new adventure and try our luck abroad. We set off on a big trip as a family. First, we travelled through Spain and Portugal, then on to the Canary Islands. In 2023, we finally arrived in Lanzarote, where we found a new home.

Here on this beautiful island, I decided to devote myself more intensively to my work as a seminar chef and founded ‘La cocina encantina’. Cooking for groups is one of the main pillars of my self-employment. When I'm not conjuring up culinary delights in seminar kitchens, I devote myself to two other activities that I also greatly enjoy: gardening and maintenance.

In addition, I have been involved in shamanism and nature connection for over twenty years. During this time, I have completed various training courses and made several trips to South and Central America. As part of a team, I now also offer seminars in which I accompany people on their vision quest in the mountains of northern Italy.
